Shipton Mill was milling flour when the Normans conquered England nearly a thousand years ago.

Now it's seen a rare boon.

Demand for their organic flour has soared from a new generation of locked-down home bakers.

Joe Lister is the head of purchasing and sales at the mill.

"We've never seen a demand spike like this before, in terms of it being very, very focused on home baking, and being so intense."

Just before the UK lockdown was imposed in late March, Shipton Mill had people waiting in a long line outside from morning until night.

Then came 10,000 online orders in three days - what they'd normally get in three months.

"It caught us off guard, massively. The number of orders is not something we normally monitor, so one day we woke up to find we have 10,000 orders, we had to close the shop and then spend three weeks fulfilling those orders, essentially, dealing with the backlog and then when we reopened we had to do it with a new queuing system, which essentially was three to stop the website from crashing."

His tip for people new to home baking?

Use good ingredients and don't spend time worrying about the results.
