This month, CIS introduces you to a traditional Bolivian recipe: Majadito de Pato, made with duck.

Ingredients for the duck

  • 1 whole duck (including breast),
  • 1 onion,
  • 1/2 carrot,
  • 1 clove of garlic,
  • 1 stick of celery,
  • 4 black peppercorns,
  • 2 bay leaves,
  • salt

Ingredients for the majadito

  • 1 cup of rice,
  • 3 tablespoons of food coloring,
  • 1/2 onion,
  • 1/2 red bell pepper,
  • 1 clove of garlic,
  • 1 cube of chicken seasoning,
  • 3 tablespoons of vegetable oil,
  • 1/2 lemon.

Some instructions for a perfect réalisation :

  1. Boil the duck with all the ingredients for 1 hour in a good quantity of water. Once the duck is cooked, cut it into large pieces.
  2. In a small frying pan, fry the food coloring with the oil, heating slowly until it releases a color. Fry the duck pieces, add the onion, paprika, red bell pepper, garlic, seasoning cube, a little cumin, salt and pepper to taste.
  3. In a large pot, pour 5 cups of duck broth, if there is not enough broth add hot water, rice and lemon juice. When it starts to boil, add all the sauce and the duck prepared before.
  4. Cook over medium heat, stirring from time to time. When the liquid decreases, turn down the heat to minimum and add 1/2 cup of duck stock or hot water.
  5. Stir and let dry a little until the rice is cooked. Finally, cut the bananas into strips and fry them. Fry the eggs, it is recommended that they are not overcooked, the yolk should be soft.
  6. Serve the rice (with the duck) with an upside down egg and 2 fried bananas.
