"The real Halloumi - the locals of a certain age know about it. The younger generation unfortunately nobody will know, because everybody knows of an old lady, usually in a village somewhere that used to make Halloumi and had either died unfortunately or stopped because it wasn't viable or she got a back pain. Nobody is making the real thing anymore, and that is our aim."
