Wingstop Chief People Officer Donnie Upshawaccepted the award and was also named as one of the industry's Top 25 executives.

"Food safety is a non-negotiable in the restaurant industry," said Doug Sutton, president of Steritech. "This award recognizes those brands that take their food safety measures beyond the minimal requirements, investing in their people, in order to build a culture of food safety excellence."

To qualify for the award, fast casual restaurants submitted a self- or peer-nomination form. From there, Steritech enlisted a third-party research and assessment firm to interview contestants and select the winner and two honorable mentions, Five Guys and Taco Bell. They were each recognized at the annual awards gala hosted by Cherryh Cansler, editor of FastCasual, and Alex Myrick of Steritech.

As part of the interview process, each restaurant brand answered a series of questions focusing on foundational food safety behaviors. These behaviors make up the seven pillars of food safety excellence: senior leadership commitment and engagement, food safety communications, defined standards and procedures, training, key performance indicators and scorecards, oversight programs and positive recognition, Sutton said.
